Dal

Recipe

Corriander seeds - ground
Tumeric
Cumin ground
Onions pureed
Salt and pepper
Black mustard seeds (optiona)
Lemon grass pureed (optional)
Garlic
Ginger
Garam masala  (opitonal)
Curry (opitonal)
Chopped tomatoes or just Ketchup
Paprika (optional)
Lentils orange - post soaked (I try to have in the freezer at all times)
Oil - for frying

Whatever you have in the kitchen basically.

This a is recipe for concenrated Dal.
Keep this in the freezer.
When in need for dal sauce, take a block out and cook in coconut milk.  Taste and adjust flavour.
This is a GREAT way to have fantastic Indian flavour food fast and not compromise on money or taste or time!.
Its a recipe adjusted from my parents restaurant.  When I make this, the pungent smell takes me  all the way back to when I was child in my parents restaurant. kitchen :)

Quick Indian Curry - Chicken Optional

 Freaking out - So much oil!!, but surprising the oil disappears later....


Fragrant - Delish

Chicken pieces or 1 kg chicken pieces with bone. (approx)
1 large tomato chopped (optional)
1 tbsp tomato paste (mostly for color)
1 cup Yogurt or Coconut Cream 
1 tbsp lemon juice
2 tbsp canola oil
 salt to taste

Be generous in the spicy, not apologetic.


Grind to a Paste 
1 large onion
4 large garlic cloves
2 inch piece ginger
1 cup Chopped Cilantro
2 green chiles chopped  (optional)
5 fresh curry leaves (optional)


Cook in frying pan.  Add below ingredients and cook further.  Add coconut milk and stir.  Add lemon juice, salt and season to taste.  Freezable for quick delicious sauces.

Spice Mixture  
1 tbsp coriander powder 
1/2  tbsp cumin powder
1/4 tbsp turmeric powder
1/2 tbsp garam masala
1/2 to 1 tbsp Chilly powder or Cayenne (to taste)
1 tsp pepper powder


 Method:
 Clean, wash and chop chicken.
Add 2 tbsp oil in a skillet. Add the ground onion mixture and fry in oil well until fragrant.
The mixture will dry out.

Sweet Peas, Asparagus and Indian Chicken

Glorious rain in the desert

Sweet peas de-threaded all ready for slaughter


Quick Indian curry (recipe) spruced up with fresh crunchy greens ( asparagus and sweet peas)!!
Generous squirt of fresh lemon juice and chili flakes, match made in heaven - I kid you not!

Frozen Dal (from freezer) can also be used as base for this sauce, then just 'top' with fresh veggies you happen to have in the fridge and serve with rice or warm bread!






Calamari, Crunchy Fennel and Cabbage Salad




Had potato salad and some thinly sliced cabbage leftovers so that's where it all began...

White cabbage - Thinly sliced
Fennel - Thinly sliced
Onions - Thinly sliced
Potato salad
Dill - loosley chopped

Thinly sliced red pepper
Chilli flakes (op)

Calamari
Hot and sweet chili sauce

Salad dressing in a jar:
Lemon juice
Olive oil
Salt
Dijon Mustard.

Mix all the veggies and toss in dressing.  Pile high.

Soak calamari in hot boiled water till soft and tender.  Drain and toss in chili sauce.
Add on top of salad pile, garnish with more dill, red peppers or chilis or chili flakes.

I added hot chilis only on my plate, some like it hot, I like it very hot, but not my kids yet.

I am a great believer in "Dressing-in-a-Jar'.  Just make and keep in the refridgerator and when you make a quick salad or anything that needs 'dressing up' voilà! Just shake and pour!
