Seasonal Peaches, nectarines, pears and apples Tarte Tatin



Pastry
1.5 cup - 130 gr of plain (GF) flour
120 gr of quality butter (cold - diced)
1/2 tsp of salt
Lemon zest
1 tsp of vinegar
Cold ice water

Mix in a food processor flour and butter, zest and salt till fine bread crumbs.
Add vinegar and just enough cold water to bind.
Take out and bring together to a ball with hands. Store in fridge or freezer to cool and "firm up"

In the meantime, 
100 gr quality butter
1/3 cup of sugar
Fruits: Seasonal: peaches, nectarines, pears, apples, etc
Nuts, ie walnuts,
Cranberries, raisins (optional) 

Suggestios
Cinnamon/cloves/nutmeg (seasonal Xmas addition) (optional) 
Candied ginger optional 

This is a great way to use up overripe fruits that otherwise would be thrown away. Perfect. No waste! It clears up the fridge and makes a deliciously fruity, Summery dessert. 

In a pan that can go into the oven. Melt the butter, then add the sugar, cook till golden brown over medium heat. Important, stay close, so the caramel does not burn.  
Turn off.
Add broken nuts and dried fruit if using.
Arrange sliced fruits in a dense circular pattern 
Peaches, nectarines, pears, apples, etc whatever is in season.  
Roll out pastry and place on top. Rustic style doesn't have to be perfect. 
Bake in 200 oC pre-heated oven till pastry is golden brown crumbly, crunchy.
Serve as is or with ice-cream or cream or custard.

The nuts add a contrasting and delightful crunch against the soft juicy fruits. Also the tarty dried cranberries and raisins.
 
This tart is best eaten fresh whilst the crust is crumbly and crisp.

Note: To prevent too much juice from running out. Dust fruits with cornflour before arranging in the pan.
Or
Do not over bake. Pre-heat oven at a higher temperature. Place Tarte Tatin in and THEN reduce temperature to 2000c in top 1/3 of the oven shelf. This should stop the fruits from "stewing".

Baby potatoes with a twist

 


Be prepared! Lucky I used both bags 3 kg of baby potatoes and it was finished!

Wash potatoes, towel dry. 
Drizzle generously with olive oil. Coat all.
Add soup powder. Yes soup power quite alot, very generously.
Add dry herbs if you have. (I keep thyme, marjoram and oregano in the freezer)
Bake in hottest oven 275 oC till soft (may not be brown)
Take the pototo masher and squish each spud to create shards to crisp up and even burn for maximum crunch!
Serve hot straight from the oven, garnish with contrasting colours ie black sesame seeds or chopped greens.

Quiche Peppers, Onions, Tomatoes - no egg Vegan friendly


Recipe for pastry
1.5 cups of plain flour
80 gr chilled butter
1/4 cup ice water
1/2 tsp salt
 
Cube butter into flour. 
Add salt
Pulse on food processor
Add water. Pulse to sticky "crumbs"
Tip onto a baking sheet and bring it together with hand. Slightly crumbly, if too dry add just enough water to make a ball. Best to wrap into a clean nylon bag and chill in the fridge.
Meanwhile, make the filling.



Filling

Onion Medium/large - thinly sliced
Garlic
Bell peppers: Red, green, orange, yellow - sliced to thin strips
Cherry tomatoes sliced in halves
Spring onions  - finely chopped garnishes
Spinach
Mushrooms (optional)
Cumin
Corriander ground (optional)
Salt 
Pepper

Fry onions till soft
Add chopped garlic
Add bell peppers, fry till JUST soft
Place into a colander to drain away excessive juices
(if the filling is to wet it will make the pastry base soggy) 

Tip: Adding whisked egg white to the pastry base will help prevent further sogginess.


Choose base: options layer sliced potatoes as base or pastry base

Kids made tahina, best and nutritious sauce to go with!




As this was a rush job and everyone was STARVING I did not take the quiche out of the silicon dish. It went straight from the oven to the table on to the plate.

Will definitely make this again it was SO tasty, kiddo loved the crisp light pastry case. And next time I will take the dish out and serve on a huge platter with possible lettuce greens on the side..

Good way to use up leftover green beans as here and leftovers in general.

 200 nis Total



 3 kg potatoes  (1.5 kg each bag)
1.5 kg cucumbers
1.4 regular tomatoes
2.4 kg limes
2 kg grapes
2.2 kg peppers
1.4  kg beets
1.2 kg carrots
1 kg peaches
1 box (1.4 kg) of no leaves cherry tomatoes 10 nis (later 2 boxes for 15 nis)
2 boxes (1 kg) with leaves - 10 nis
2 challahs 2 x 10
2 boxes of lettuces  2 x 10
2 packs of sweet corn 2x10

200 nis total

The black grapes were incredible! Super sweet, and crunchy. No seeds. Perfect!
Sweet corn, pale white, very very sweet and delicious
Note: dinner for 7 people 3 vegetarians. Baked 2 kgs of potatoes, only 2 spuds left on platter.

Potato Recipe: Wash spuds, dry, cover in olive oil, coat generously with quality soup powder. Plus any dry herbs ie, thyme, oregano, rosemary etc., Whatever you have in the kitchen.
Bake on high heat still soft inside.
Take out of oven squish with mash tool till each spud slightly crushed.
Return to heat on GRILL, (optional drizzle more oil.)

Was late, a lot of places had closed already, better to go at 15:30 - 16:00?

Mangoes 1 box 5 nis (deal: 2 boxes / 10 nis) mixed another box of other veg/fruit
Green and Red apples 2 box/10 nis
Tomatoes(soft and salad quality) 5 nis/box & 1.9/kg;

Potatoes were great!
Parboiled then roasted with chicken stock powder and olive oil in hot oven. Did the lot for Shabbat dinner was completely finished!

Shabbat dinner:
2 vegans - Dore and Gav, Oren, Yoni, Eylon, me and Momo




This was the first shabbat that Dore was home from college. Unconsciously, it became a sort of celebration. Oren brought two old, good friends, one from nursery time!
An evening of good food, talk and old friendships.
