Cucumber Pomegranite Salad


Quick dressing:

Vinegar (regular 5%)
Sugar
Salt

Garnish: white, black sesame, pomegranate

Note: sugar can be replaced with another sweetener as long as it doesn't discolour the overall salad.
This salad /pickle is subtly beautiful a play of greens with ruby red studs,  sprinkled with black and white flecks. Delightfully light in character and taste. Colours: Stunning!

Method

Mix all the dressing ingredients. 
This is a rather strong dressing so add it tea/tablespoon at a time to sliced cucumbers, depending on the size of the salad, toss, taste, adjust accordingly. Gently add pomegranate seeds
Sprinkle more pomegranate seeds, black and white sesame seeds on top for prettiness.  

Note:
Any light coloured vinegar for example cider, maybe even rice vinegar? as long  as it keeps the whiteness of  the cucumbers,  balsamic would not do here.
