Baby potatoes with a twist

 


Be prepared! Lucky I used both bags 3 kg of baby potatoes and it was finished!

Wash potatoes, towel dry. 
Drizzle generously with olive oil. Coat all.
Add soup powder. Yes soup power quite alot, very generously.
Add dry herbs if you have. (I keep thyme, marjoram and oregano in the freezer)
Bake in hottest oven 275 oC till soft (may not be brown)
Take the pototo masher and squish each spud to create shards to crisp up and even burn for maximum crunch!
Serve hot straight from the oven, garnish with contrasting colours ie black sesame seeds or chopped greens.
