Baba Ganoush Ingredients: • 2 large or 3 medium eggplants • 2 green chilies • 1 paprika pepper (or red bell pepper) • 1 tomato • 2 cloves of garlic • ½ red onion • 2 tbsp olive oil • 2 tbsp pomegranate molasses • 1 tbsp lemon juice • 2 tsp chili flakes (optional for the heat) • 1 tsp salt • ½ tsp black pepper • Chopped parsley to garnish Instructions: 1. Poke the eggplants and roast on the stove top for 15 minutes until nicely charred, rotate every 5 mins 2. Roast the chilies and the tomato in the oven for 30 minutes at 200°C / 390°F 3. Transfer eggplants to a bowl, cover with a plastic wrap or lid, this will make the peeling easier 4. Peel the skins of the vegetables and roughly chop the eggplants to small chunks 5. Transfer the chopped eggplants to a bowl 6. De-seed the chilies and roughly chop the chilies, tomatoes and add into the bowl 7. Finely mince the garlics and finely chop the onion add into the bowl 8. Add 2 tsp salt, 1 tsp cumin, ½ tsp black pepper and optionally 2 tsp chili flakes (pul biber) for heat 9. Finally add 2 tbsp olive oil, 1 tbsp lemon juice and mix to combine 10. Transfer to a bowl and gently layer the mixture 11. Serve and garnish with pomegranate molasses and chopped parsley Mutabbal Ingredients: • 2 large or 3 medium eggplants • 1 clove of garlic • 3 tbsp tahini (substitute or add yogurt to taste for the Turkish version) • 1 lemon (juice) (about ¼ cup) • 1 tsp cumin • 1 tsp salt • Pinch of freshly ground black pepper • 1 - 2 tbsp olive oil to garnish • pomegranate seeds and sumac to garnish Instructions: 1. Chop the peeled and roasted eggplants in small chunks and add into the bowl 2. Mince and grind the garlic together with 1 tsp salt and add into a small bowl 3. Squeeze 1 lemon (1/4 cup lemon juice) and add into the garlic together with 1 tsp ground cumin 4. Mix and let the mixture sit for 5 - 10 mins for the garlic flavor to infuse 5. Strain through a sieve (optional to filter garlic bits and mellow down the flavor) and add into pot. 6. Season with a pinch of freshly ground black pepper 7. Finally add ¼ cup tahini and mix with a fork or whisk to smash and combine 8. In Turkey and Syria, along with tahini, equal amount of yogurt can also be added 9. Garnish with olive oil and pomegranate seeds and optionally with fresh mint and sumac

Mayonaise

 








So freakin easy it's criminal never ever buy store-bought chemical filled mayo ever again!


Ingredients

Full egg yolk and whites
salt
vinegar
oil neutral

Note: 
Layer ingredients
The egg then oil on top (Do NOT stir)
Add salt, vinegar

Mix without moving the blend stick till light and fluffy. Refrigerate.

Tip: I sometimes like to add black garlic granules, it adds depth, flavour and colour! if you don't mind your mayo to be slightly beige

Green sauce for fish


Recipe

Chili
Garlic 
Salt
Sugar
Fish sauce
Vinegar
Olive oil
Chopped green onions
Coriander
Limes/Lemons 

Mix all and let to rest. 
Taste amazing on served just baked fresh mullet fish.

Flank sandwich

Exiting Corona, one son still here before leaving back to the dorms, another back for 24 hours to attend an exam. So its flank all round on an a long baguette sandwich. Just like old times.

Easy Peasy Lemon Chutney



Ingredients

Lemons Sliced
Lemon Juice (optional)
Turmeric
Black mustard seeds
Chili flakes
Oil for frying
Honey
Salt
Water

Thinly slice Lemons, set aside.
Heat oil in frying pan and fry mustard seeds till they start to jump.
Add turmeric, and chili flakes (if using). 
Toast.
Add lemon slices.

Add water to cover and cook till the lemon skins are soft (has if making jam)

This is the second time I added water as the skins were still too tough.

The sauce will reduce and thicken  (for the second time here.)
Do not add salt this could toughen the skin.

Once cooked down to the consistency you like.  Take off heat.
Add salt and if need sweetening add honey and /or lemon juice.  Adjust.  Great on Indian food,  adds a'kick to sandwiches and salads

Aubergine Salad with Pesto Spread

Aubergine (Eggplant) 
Cloves garlic, peeled 
Bunches scallions, white and green parts, roughly chopped
Coriander leaves chopped
Paprika sweet

Tomatoes
Onions


Spread
Blend scallions, garlic, paprika and coriander to a paste. (freezable at this stage)


Slice augbergines, drizzle with olive oil and salt. Grill both sides in oven.
Cover each slice with above spread and return to grill for a few more seconds.

Sauce
Fry chopped onions till soft.  Add tomatoes and cook till all soft and a thick sauce is made.  
Season with salt and black peper.

Add prepared aubergines to tomatoe sauce and carefully stir.
Enjoy!

Dal

Recipe

Corriander seeds - ground
Tumeric
Cumin ground
Onions pureed
Salt and pepper
Black mustard seeds (optiona)
Lemon grass pureed (optional)
Garlic
Ginger
Garam masala  (opitonal)
Curry (opitonal)
Chopped tomatoes or just Ketchup
Paprika (optional)
Lentils orange - post soaked (I try to have in the freezer at all times)
Oil - for frying

Whatever you have in the kitchen basically.

This a is recipe for concenrated Dal.
Keep this in the freezer.
When in need for dal sauce, take a block out and cook in coconut milk.  Taste and adjust flavour.
This is a GREAT way to have fantastic Indian flavour food fast and not compromise on money or taste or time!.
Its a recipe adjusted from my parents restaurant.  When I make this, the pungent smell takes me  all the way back to when I was child in my parents restaurant. kitchen :)
