Cashew cheese with Ash / Charcoal - Vegan Cheese

 Recipe 1 -more stronger, mature flavour - light beige colour

Milder - whiter/paler colour

penicillium candidum 1/16 tsp.
mesophilic 1/8 tsp (Probiotic)

Despite 2 did not contain any oil, the texture was just the same as 1 with coconut oil

Lo Mai Gai



















Ingredients

Glutinous rice

Original
Chicken thighs bones or wings upside down.
oyster sauce
garlic
soy sauce
shitake mushrooms (no need premium) lots
Fried onions - optional 
Wakame
sliced celery (optional)


Jasmin tea

Seafood
Prawns
Shrimps (original dried)
Mussels

Vegan
Tofu
Chestnuts
Arame

  • Bamboo shoots – spring
  • Beef (thinly sliced or scraps)
  • Canned tuna
  • Chestnuts (recipe) – fall

NOTE:  soak glutinous rice first!

Glutinous rice is a whole different breed, forget it's close cousin white rice or even brown rice and the rest. 

Leave the rules at the door, coz i thought I totally fucked it up, out of sheer laziness and despair, 4th time lucky I gave up trying to fix it. Well whaddya know!  it came out the best.

Tip: Use homemade mushroom powder for adding flavour, no need to use chemical-up oyster or vegetarian sauce
