Peel, clean chicken feet
cover with boing water - black vinegar and silan (date syrup) for colouring till done about 10-15 mins

Fry 3 at a time, CAREFUL!
Toss immediately in pool of iced water! Leave for one hour in.
Cooking in spices and plenty of water. Covered for hours till soft. Take of lid and reduce liquid to sticky, delicious sauce. Freeze if you can have any left.

1.5 lb. chicken feet
Caramel:
1 tbsp oil
3 tbsp sugar
Ginger (about 1oz)
5-6 cloves of garlic
2 shallots
1/4 tsp salt
3 Star anise
2 pieces of Cinnamon stick
1/2 tsp black pepper
Green onion/chili pepper
Sauce:
1 tbsp soy sauce (I used Maggie)
1 tbsp oyster sauce
3 tbsp black bean sauce
1/4 tsp five spice powder

Ingredients
- 2 lbs of chicken feet
-2 tbsp garlic,
- 4 slice ginger,
- 2 tbsp chili bean paste,
- 2 tbsp chinese cooking wine
- 2 tbsp salted black bean
- 3 cubes red fermented beancurd good
- 1 tbsp brown sugar,
- 1 tbsp oyster sauce,
- 8 piece dry chili,
- 3 star anise
- 2 green onion,
- salt and black pepper for taste,
simmer until tender, then enjoys...

Boil up water with black vinegar + silan = black
bring to boil add cleaned cut chicken feet
10 mins - 15
Dry - in room becomes very dry and sticku
Fry oil hot two/ 3 at a time. - very careful - cover
in wide shallow pot
