Recipe for pastry
1.5 cups of plain flour
80 gr chilled butter
1/4 cup ice water
1/2 tsp salt
Cube butter into flour.
Add salt
Pulse on food processor
Add water. Pulse to sticky "crumbs"

Tip onto a baking sheet and bring it together with hand. Slightly crumbly, if too dry add just enough water to make a ball. Best to wrap into a clean nylon bag and chill in the fridge.

Onion Medium/large - thinly sliced
Garlic
Bell peppers: Red, green, orange, yellow - sliced to thin strips
Cherry tomatoes sliced in halves
Spring onions - finely chopped garnishes
Spinach
Mushrooms (optional)

Fry onions till soft
Add chopped garlic
Add bell peppers, fry till JUST soft
Place into a colander to drain away excessive juices
(if the filling is to wet it will make the pastry base soggy)

Tip: Adding whisked egg white to the pastry base will help prevent further sogginess.

Will definitely make this again it was SO tasty, kiddo loved the crisp light pastry case. And next time I will take the dish out and serve on a huge platter with possible lettuce greens on the side..
Good way to use up leftover green beans as here and leftovers in general.
